Ingredients
- Beef fillet (Carrara Wagyu fillet shown)
- Salt
- Beef tallow
- Butter
- Crushed garlic
- Fresh aromats (thyme shown)
Method
Unpack the beef fillet.
Trim the beef fillet, removing any silver skin or unwanted bits.
Cut the beef fillet into thick steaks.
Place a carbon steel or cast iron pan on medium-high heat and allow it to warm up.
Season the steak generously on all sides with salt. (Optional: dry brine the steak in the fridge overnight).
Add a decent amount of beef tallow to the hot pan.
Place the seasoned steak in the pan.
Place a protein press on top of the steak to ensure full contact with the pan.
Cook until a good crust forms on one side, then flip the steak.
Add butter, crushed garlic, and fresh aromats (like thyme) to the pan.
Baste the steak continuously with the melted butter and aromats to keep it juicy and moist.
Once cooked to your desired doneness, remove the steak from the pan and let it rest before slicing and serving.
