Ingredients
Bliss Balls
- 300 g Medjool dates, pitted
- 150 g almond meal
- 30 g cacao powder (unsweetened)
- 32 g peanut butter
- 1 tsp vanilla extract
- 10 g chia seeds
- Pinch of sea salt
- 1–2 tbsp water, if needed to bind
Coating (optional)
- 30 g desiccated coconut or extra cacao powder, for rolling
Method
Make the Bliss Balls
If your dates are firm, soak them in warm water for 5–10 minutes, then drain well.
Add the pitted dates, almond meal, cacao powder, peanut butter, vanilla extract, chia seeds, and sea salt to a food processor. Process until the mixture comes together into a sticky dough. If it's too dry, add water 1 tsp at a time.
Taste and adjust — add a little more cacao for deeper chocolate flavour or a pinch more salt to enhance sweetness.
Roll the mixture into balls about 3–4 cm in diameter (roughly 1 heaped tablespoon each). You should get about 16 balls.
Roll each ball in desiccated coconut or extra cacao powder to coat, if using.
Place on a lined tray and refrigerate for at least 30 minutes to firm up before serving.
Storage
Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.
